What is Pav Bhaji?

Pav Bhaji consists of two main components: "Pav" (a type of soft bread roll) and "Bhaji" (a spicy mixed vegetable mash). The Bhaji is typically made with a blend of potatoes, tomatoes, peas, and other vegetables, cooked with a special mix of spices and topped with a generous dollop of butter. The Pav is usually toasted with butter until golden and crispy.

Ingredients

For the Bhaji:

  • 4 large potatoes, boiled and mashed
  • 1 cup green peas, boiled
  • 1 large onion, finely chopped
  • 2 large tomatoes, finely chopped
  • 1 green bell pepper, finely chopped
  • 1 cup cauliflower, finely chopped
  • 2 tbsp Pav Bhaji masala
  • 1 tsp turmeric powder
  • 1 tsp red chili powder
  • 2 tbsp butter
  • 2 tbsp oil
  • Salt to taste
  • Fresh coriander leaves for garnish

For the Pav:

  • 8 Pav bread rolls
  • Butter for toasting
  • Lemon wedges for serving
  • Finely chopped onions for garnish

Instructions

1. Prepare the Bhaji:

  1. Heat oil and butter in a large pan over medium heat.
  2. Add chopped onions and sauté until they turn translucent.
  3. Add chopped tomatoes and cook until they become soft and mushy.
  4. Add green bell pepper and cook for a few minutes.
  5. Add mashed potatoes, boiled peas, and chopped cauliflower to the pan.
  6. Mix well and cook for 5-7 minutes.
  7. Add Pav Bhaji masala, turmeric powder, red chili powder, and salt. Mix everything thoroughly.
  8. Mash the mixture using a potato masher until it reaches a smooth consistency.
  9. Add water as needed to adjust the consistency of the Bhaji.
  10. Let it simmer for 10-15 minutes, stirring occasionally.
  11. Garnish with fresh coriander leaves.

2. Toast the Pav:

  1. Heat a tawa (griddle) on medium heat.
  2. Slice the Pav bread rolls horizontally and spread butter on the inner sides.
  3. Place the buttered side down on the tawa and toast until golden and crispy.
  4. Flip and toast the other side for a few seconds.

3. Serve:

  1. Serve the hot Bhaji on a plate, topped with a dollop of butter.
  2. Place the toasted Pav rolls on the side.
  3. Garnish with finely chopped onions and lemon wedges.
  4. Enjoy your homemade Pav Bhaji with a squeeze of lemon and a sprinkle of chopped onions for an authentic street food experience.
